Recipe: Zummaborscht or "Summer Soup"
Ingredients:
- 1/2 lb. smoked farmer's sausage (or ham bone)
- 2 qts. water
- 2 cups chopped sorrel (and/or kale)
- 1 cup chopped onion tops
- 1 tsp salt
- 1/2 cup finely-chopped dill
- 2 or more cups buttermilk
- 1/2 or more cup cream
- 1 1/12 - 2 qts. cubed potatoes
Directions:
- combine water + sausage in a large pot and cook for half an hour (if ham, cook one hour)
- add salt + potatoes and bring to a boil
- add remaining ingredients except cream + buttermilk
- boil for 20 minutes slowly
- slowly add cream + buttermilk, stirring
- bring to a boil, remove from heat, and serve
TIP: sorrel is available at many grocery stores in the organic herbs department.
