Rhubarb Muffins

These rhubarb muffins are absolutely delicious and incredibly simple to make! They do not make a huge amount, around a dozen medium sized muffins, so I suggest that you double the recipe if you aren’t a very frequent baker. This recipe and the portions are excellent if you are an individual who bakes quite often because the muffins will last you a decent amount of time and it wont be long until you have another opportunity to try out a new recipe!

Rhubarb recipes are excellent for my family because we have a MASSIVE rhubarb plant in our backyard! It seems weird to us that it does so well, but it seems like the rhubarb is the only thing that the neighborhood squirrels won’t eat. It’s annoying that they eat all of our tulips and birdseed (they even ate the actual wood of our bird feeder once…) but at least they spare us the rhubarb. More rhubarb muffins for us!

These muffins are delicious; if you are a fan of relatively dense pastry, then these are perfect for you! When I bake them I put them in the oven for the shorter of the suggested times. Usually around 15 minutes unless I make them a bit bigger in which case I keep them in the oven for an extra couple of minutes! They’re best served fresh out of them oven: I certainly enjoy my rhubarb muffins at breakfast with a honey spread and a nice cup of fruity tea!
